ECOSSE WITH LOVE

Sparkling

Scotland in French translates as Ecosse – and this whisky cocktail recipe certainly brings together the best of Scotland and France with crisp champagne and Chivas XV, which is selectively finished in the most prized casks. These two luxurious elements make this the perfect celebratory drink, while the fresh mint and juicy grapes transform it into a wonderful summer cocktail, too.

15 ml
Sugar Syrup

PRO TIP

You can create different types of infused Chivas by experimenting with your favourite flavours – try using apple, cinnamon or even cocoa beans

CHIVAS GRAPES

To make the raisin infused Chivas XV, add 70g of raisins into one 700ml bottle of Chivas XV. Strain after 4 hours

MUDDLE

Place the grapes in a mixing vessel and muddle them together

ASSEMBLE

Add mint leaves to the bottom of the mixing vessel, then add the raisin-infused Chivas XV and sugar syrup

STIR

Fill to the top with ice and stir for approximately 20 seconds

POUR

Strain into a highball glass and fill with ice

BUBBLES

Top with champagne, so that the level is 3 cm below the top of the glass

REFINE

Add one or two more ice cubes to make sure they’re tight and compact

SERVE

Garnish with mint sprig and serve

FANCY MAKING YOUR OWN SUGAR SYRUP?

Simply heat one part sugar with one part water, and simmer together until the sugar has fully dissolved. If you like things extra sweet, use two parts sugar to one part water.
