The William Wallace is a twist on the classic Rob Roy. Like how the Rob Roy cocktail is named after a Scottish folk hero, the William Wallace was inspired by another iconic Scottish knight and icon.
This version adds Pedro Ximénez to the mix for a rich sweetness and gorgeous red hue, while the citrus notes in the bitters offset the sweetness of the sherry.
When stirring whisky cocktails with ice, only stir until the outside of the mixing glass feels cold – any further stirring will over dilute the drink.
This cocktail was created by well-known Manchester bartending brothers, Joe and Dan Schofield.
